This year, the team behind this famous guide, which has travelled across France for half a century to promote local gastronomy, has recognised the work of Damien Amilien, who has been given the impressive title of Best Pastry Chef of the South West.

A firm believer that pastries should be as aesthetically pleasing as they are delicious, Damien’s recipes are creative yet sophisticated. His creations are subtle and expressive, with an emphasis on seasonal ingredients. He particularly likes to work with summer fruits and citrus fruits for their tangy flavour, which adds a refreshing lightness, and he’s also passionate about chocolate.
