Chef Bertrand Noeureuil poetizes the seasons

«You can understand cooking when you understand the landscape.»

Bertrand Noeureuil has made this sentence from Jean Giono, which Arnaud Donckele cites in his work, his mantra. Talkative and passionate, Bertrand Noeureuil sees the pleasures of the table as a total experience, where the welcome, the service, the tableware and the language guide the tasting experience. Bibliophile with a passion for culinary terminology and history, he uses a veritable dictionary of gesture and plays on cooking methods to suit the season.

L'Observatoire du Gabriel, which boasts one star in the Michelin Guide, unveils a sensory cuisine where each dish celebrates the treasures of the market gardeners, fishermen, breeders and wine growers, allowing chef Bertrand Noeureuil to write his repertoire of cuisine from day to day. Skilfully infused with all the richness of the vineyards, the chef orchestrates a bucolic gastronomy and draws on his culinary culture to write his score where the cooking and sauces follow the rhythm of the seasons.

The wine collection

The wine list at the Michelin-starred restaurant L’Observatoire has been carefully chosen by Stéphanie de Boüard-Rivoal. Featuring more than 1,000 different wines, it’s inspired by an open-minded sense of curiosity, both in terms of the regions and the variety of vintages available.

Of course, wines from the vineyard of Château Angelus are included, along with a wide range of bottles from all over France and further afield.
