
L’Observatoire, a Michelin-starred gastronomic restaurant in Bordeaux
Located on the top floor, L’Observatoire is Le Gabriel’s Michelin-starred gastronomic restaurant, its entrance framed by luminous French doors that recreate the atmosphere of a private apartment.
The dining room, with its high ceilings, features Versailles-style parquet and soft grey carpets, inviting guests into a dreamlike setting that evokes nature.
Here, they are seated at tables decorated by master artisans of French art de vivre — ceramists, cabinetmakers, silversmiths, cutlery makers, glassmakers.

At L’Observatoire, Bertrand Noeureuil promises an experience brimming with “wonderful memories.” That promise is fulfilled by neo-classical cuisine that lets the word “artisanal” express its true meaning. Dexterity and meticulous know-how are translated through gesture as the Chef revisits and showcases dishes rooted in the great classics of French cuisine.


Cuisine for body and spirit
Colourful and full of character, these dishes also have a spirit that is reflected in names chosen with care by Chef Bertrand Noeureuil. An enthusiast of culinary literature and a lover of words, he playfully summons a vocabulary that recounts a precise story of the associations in each dish: by just reading the menu, the journey is already underway.





Through the seasons
On the menu, cooking techniques and sauces are inspired by the seasons. In spring and summer, light, refreshing dishes are marinated, steamed, seared or grilled. In autumn and winter, they are stewed, braised, roasted and smoked to warm body and spirit.
Working in tandem with produce from La Ferme 1544, Bertrand Noeureuil shares his personal interpretations of Aquitaine. The region, from shore to land and wine, resonates like an invitation to discover myriad treasures: white asparagus from Soustons; shad from the Adour river; hake from Saint-Jean-de-Luz; stuffed neck of duck and pigeon from Les Landes or lamb from the Médoc. This loyalty to the local terroir continues in desserts with grapes, Ente plums, cherries from Agen and Roussanne peaches.

The cheese cellar
The cheese cellar is one of the most wonderful surprises at L’Observatoire.
Featuring a collection of country plates from the earthenware factory at Martres-Tolosane in Haute-Garonne, the cheese cellar is a must-see, an imaginative way to follow the Garonne from its source in the Pyrenees mountains to its river in Bordeaux.
Astonishing and surprising cheeses to pair with wines from Porto, Madeira, Jura or Gaillac, served by the glass.

An exceptional wine cellar
Head Sommelier Pierrick Chapel looks after a cellar that features more than 1,200 references.
Legendary and emerging vineyards from across France are represented here, from Bordeaux, Burgundy and Champagne to the Loire, Alsace, the Rhone Valley, Savoie and Provence. There is also a notable collection of Château Angelus vintages from 1988 to present day.
A few European and New World wines enrich this vast array. Lastly, more than 50 wines are available by the glass.
