La Ferme 1544: bespoke sourcing and harvesting

The dishes highlight his obsession with the ingredients he uses. Plants, particularly vegetables, play a vital role in his cuisine, serving as the central element around which everything else is structured. 

Supported for many years by a solid network of local producers, he is now embarking on a new adventure: a 9-hectare farm in Saint-Loubès, on the banks of the Dordogne. Passionate about sourcing, this is the culmination long-held dream: supplying his kitchens with his very own ingredients, controlling the entire production chain and showcasing the local terroir.

La Ferme 1544 has recently begun supplying Le Gabriel with fresh fruit and vegetables, along with cereals, mushrooms, honey, meat and fresh eggs. With total transparency and complete control of production, we can give free rein to a new approach to cooking, exploring and sparking new emotions and embarking on a journey which is surprising in its simplicity.
